⚠️ Source-confidence note: the dish is attested in use: a press report found most tables at an Isla Mayor restaurant eating "arroz caldoso con colitas". The town's Feria also celebrates rice and crayfish together. However, no published local recipe was found. The blueprint below is a reconstruction based on general caldoso technique and the documented local ingredients. Verify it with Isla Mayor cooks.
01Geographic & Texture Profile
- Primary Geographic Zone: The Guadalquivir marshes (Marismas), province of Sevilla: Isla Mayor, with Puebla del Río and Villafranco.
- Liquid & Texture Profile: Caldoso (soupy).
- Traditional Cooking Vessel & Fuel: A cazuela or deep pan over gas, in town restaurants and homes.
02Historical & Cultural Context
Isla Mayor was born from rice: paddies were laid out in the Guadalquivir marshes in the first half of the 20th century, and the town grew around them (see the history page for the settlement debate). Decades later the American red swamp crayfish (Procambarus clarkii) was introduced, around 1973–74 according to locals. It is an invasive species that colonised the paddies and "ha terminado por convertirse en producto estrella de la cocina local". Today the town lives largely from crayfish: processing plants peel the tails (colitas) for export. Every June the Feria y Fiestas del Arroz y el Cangrejo celebrates both products. Local menus offer rice with duck and rabbit, caldoso and meloso, and crayfish in sauce, fried, with tomato or in croquettes.
Culinary science: most crayfish flavour is in the heads and shells (fat and astaxanthin). As with the Vinaròs prawn rice, they are fried and simmered into the stock, and the peeled tails go in only for the last minutes, so they stay tender.
03Local Town-by-Town Variations
- Isla Mayor restaurant style (attested): Caldoso with crayfish tails (colitas).
- Feria / home versions: Rice with crayfish and duck or rabbit, caldoso or meloso. ⚠️ Specific combinations are not documented.
- Compare the marsh-duck rice: arroz caldoso con pato de las marismas.
