Arròs amb Ànec (Arròs d'Ànec de l'Albufera)

Seco · dry Cooked in Paella València

01Geographic & Texture Profile

  • Primary Geographic Zone: L'Albufera and La Ribera Baixa: Sueca, El Palmar, El Perellonet, Silla, Catarroja, Cullera.
  • Liquid & Texture Profile: Seco (dry) in the paella version, the Albufera hunting tradition documented here. A clay-baked arròs amb ànec i naps exists as a separate household variant (see §3).
  • Traditional Cooking Vessel & Fuel: A steel paella over orange-tree or rice-straw fire, or a clay cassola in the oven for the turnip variant.

02Historical & Cultural Context

L'Albufera is Europe's most important wintering wetland for ducks, and from October to January the tirades (regulated hunting days) traditionally supplied wild duck (collverd mallard, sivert teal, bragat) to the villages of the lake. Sueca, the largest rice-producing municipality in the Valencian Community, hosts the Festa de l'Arròs and the Concurs Internacional de Paella Valenciana. Its cooks long put duck into the pan alongside or instead of chicken. With the decline of hunting, farmed duck (often Muscovy or Barbary duck) has taken over.

Culinary science: duck has a thick subcutaneous fat layer and darker, myoglobin-rich meat. Rendering the skin slowly releases fat, which then becomes the frying medium for the sofrito and the rice, so the grains taste of duck. The meat must be cooked for longer than chicken (≈35–45 min in the fondo) to tenderise its collagen. Turnip, the classic partner, absorbs duck fat and balances it with its mustard-like bitterness.

03Local Town-by-Town Variations

  • The Sueca Style: Duck + chicken + rabbit in a paella valenciana frame (bajoqueta, garrofó, tomato, saffron). In winter, artichoke joins the pan. Little or no pimentón. Classic orange-wood fire.
  • The El Palmar / Albufera island Style: Duck alone, often wild, with eel (anguila) sometimes added, closing the circle with all i pebre. Garlic-heavy base. Some cooks add a few wild mushrooms in autumn.
  • The Silla / Catarroja Style: Arròs amb ànec i naps. Duck + turnip + white beans or garrofó, cooked in a cassola and finished in the oven. Closer to arròs al forn in technique.
  • The Cullera Style: Duck + coastal vegetables (artichoke, ajos tiernos). Rabbit is sometimes swapped for pork ribs.

04The Master Recipe (4-Person Batch Blueprint)

Variant represented: Sueca (duck + chicken frame, winter artichoke).

The Flavor Base (El Fondo)

Ingredient Quantity
Duck, jointed (thighs + breasts with skin, carcass chopped) 1 (≈ 1.6 kg gross)
Chicken thighs 400 g
Olive oil 40 ml (the duck fat does the rest)
Bajoqueta (flat green beans) 150 g
Garrofó (fresh or soaked) 100 g
Artichokes, quartered (winter) 4
Ripe tomato, grated 150 g
Saffron 0.3 g
Water 1.8 L
Salt to taste

Extraction:

  1. Put the duck pieces skin-side down in the cold pan with the oil and render slowly over medium heat for 15 min. Spoon off excess fat, keeping ≈ 80 ml in the pan.
  2. Add the chicken and brown everything for 15 min more.
  3. Push the meat to the edge and fry the beans, garrofó and artichokes for 5 min.
  4. Add the tomato and fry until jammy (5 min).
  5. Add the water and saffron. Simmer for 35–40 min, reducing to ≈ 1.25 L.

Assembly Ratios

Element Quantity
Short-grain rice (Senia / Bomba) 400 g
Broth ≈ 1.2–1.3 L
Duck ≈ 1.6 kg gross

Step-by-Step Cooking Blueprint

  1. Preparation: Joint the duck the day before and salt it lightly (a dry brine).
  2. Fondo: As above.
  3. Rice: Scatter and level the rice. Don't stir after this.
  4. Fire: High for 8 min → medium-low for 8–9 min → high for 1 min (socarrat).
  5. Finish/Resting Phase: Rest 5 min. [Silla turnip variant: in a cassola, use 3 peeled turnips in wedges instead of the beans and artichoke, with the same broth ratio at 2:1. Bake at 230 °C for 20 min.]

Duck & wetland rices: Rices of the great rice marshes: Albufera, Ebro Delta, Guadalquivir.

Festive poultry rices: Turkey, duck and free-range cockerel for holidays.
