⚠️ Source-confidence note: recorded in a Valencian home-recipe collection hosted by the Universitat de València (uv.es/baldovi), with no town attribution. The link to L'Albufera and its eels is my inference from the ingredients.
01Geographic & Texture Profile
- Primary Geographic Zone: Province of València, most plausibly the L'Albufera eel country (⚠️ inferred).
- Liquid & Texture Profile: Seco (dry). Baked 30 min or more, with less than double water.
- Traditional Cooking Vessel & Fuel: A flat earthenware cassola in the oven.
02Historical & Cultural Context
A rare baked rice that puts eel, the fish of L'Albufera's all i pebre, together with the paella vegetables: bajoqueta, tavella and garrofó. A whole head of garlic boils with the beans, then the eel pieces cook in that broth for 10–15 min before everything goes into the cassola with fried rice and paprika. It bridges the wetland's two great dishes, the paella and the eel stew.
Culinary science: eel is very fatty and gelatinous, so it enriches the broth and keeps the baked rice moist. That is why the source uses less than double the water and a longer bake (about 30 min): the fat slows evaporation.
03Local Town-by-Town Variations
- Recorded version: Eel + bajoqueta + tavella + garrofó + garlic head + tomato + paprika + saffron.
- Related: The recorded paella valenciana in the same collection allows eel as an optional addition. Pego (Marina Alta) once made an arròs amb anguila (see the Alicante lost-rices registry in provincial_alicante.md).
- ⚠️ Town variants are not documented.
