Arroz con Galeras y Alcachofas

Arròs amb Galeres i Carxofes

Meloso · creamy Cooked in Paella Castelló

01Geographic & Texture Profile

  • Primary Geographic Zone: El Baix Maestrat coast: Vinaròs, Benicarló, Peníscola. It continues north into the Ebro Delta (Terres de l'Ebre).
  • Liquid & Texture Profile: Meloso (creamy), the most common restaurant presentation during the Jornades de la Galera. Seco and caldoso versions also appear on the same menus.
  • Traditional Cooking Vessel & Fuel: A steel paella or clay cassola over gas.

02Historical & Cultural Context

The galera (Squilla mantis, mantis shrimp) is the winter jewel of the Vinaròs and Benicarló trawler fleets. Its sweet, lobster-like flesh is hard to extract, so it is ideal for flavouring stock. Vinaròs runs the Jornades Gastronòmiques de la Galera every February, and their menus feature rice with galeres in seco, meloso and caldoso forms, most often paired with alcachofa de Benicarló, whose season (Nov–Mar) matches the galera's. Other pairings documented on those menus include galeres with chickpeas and spinach, with monkfish and baby cuttlefish, and with boletus.

Culinary science: the galera's shell holds most of its flavour (astaxanthin-bound fats and free amino acids). Crushing and frying the bodies and simmering them into the stock extracts that flavour. A few whole galeres are kept back and laid on top for the final minutes so they stay juicy. A meloso finish suits the dish because the gelatinous shellfish stock binds with rice starch.

03Local Town-by-Town Variations

  • The Vinaròs Style: Galeres + Benicarló artichoke. Meloso. Fumet made from galeres and rockfish. Garlic + tomato sofrito.
  • The Benicarló Style: More artichoke than galera. Seco in the paella.
  • The Peníscola Style: Galeres + sepia + ajos tiernos.
  • The Ebro Delta (Catalan border) echo: Galeres + delta rice + sometimes clams, cooked caldós.
