Andalusia

01Overview

Andalucía is Spain's largest rice producer. The marismas del Guadalquivir (Isla Mayor, La Puebla del Río, Villafranco) were put under rice in the 20th century, partly by Valencian settlers. Andalusian rice cooking, however, follows its own logic. On the coast it is predominantly caldoso (soupy): fishermen's pots of fish, shellfish and cuttlefish (choco), built on an onion-and-pepper sofrito, sometimes thickened with a fried-bread majado, and often scented with fino or manzanilla. Inland, rice goes with game from the sierras (partridge, hare, rabbit) and with the mixed "arroz con cosas" of Sevilla's ventas. The region's own Andalusi heritage (rice was introduced to al-Andalus) means rice desserts and spices have deep roots here too.
