Arroz con Mariscos y Pescados de Candamo

Arroz de Grullos

⚠️ Source-confidence note: the recipe comes from Vivir Asturias, which associates it popularly with Grullos (concejo de Candamo). The source gives ingredient proportions (½ kg shellfish to 1 kg fish, or the reverse) but not the rice or liquid quantities, which are reconstructed below. No historical origin is given.

01Geographic & Texture Profile

  • Primary Geographic Zone: Asturias, specifically Grullos in the concejo of Candamo (Nalón valley), with seafood from the central Asturian coast.
  • Liquid & Texture Profile: Seco (dry). Boiled about 15 min, then finished in the oven until golden.
  • Traditional Cooking Vessel & Fuel: An oven-proof cazuela, hob plus oven.

02Historical & Cultural Context

An Asturian seafood rice built on the Cantabrian catch: andaricas (velvet crabs, nécoras), cigalas, clams and prawns, with pixín (Asturian for monkfish), squid and congrio (conger). Unusually for an inland concejo, it is tied to Grullos, the agricultural village famous for its strawberries; the Festival y Feria de la Fresa de Candamo is held on the first Sunday of June. The method sets it apart from Mediterranean rices: shellfish are boiled first, the clams' own liquor becomes the cooking broth, and the dish goes into the oven to brown on top.

Culinary science: the clam liquor is salty and rich in glutamates, which makes it a ready-made stock. Andaricas are halved so their roe and juices flavour the rice. Oven-finishing gives top heat for a golden surface, similar to the Valencian arròs al forn logic applied to seafood.

03Local Town-by-Town Variations

  • Grullos / Candamo (Vivir Asturias): Cigalas, andaricas, clams, prawns + monkfish, squid, conger, peas, a spoon of tomato sauce. Oven finish.
  • Asturian coast: ⚠️ Other caldoso shellfish rices with andaricas are cooked along the coast, but no town recipe was found. See also arroz con almejas and bogavante del Cantábrico.
