⚠️ Source-confidence note: documented in the Revista Española de Nutrición Comunitaria's 2022 survey of forgotten dishes of Extremadura, which notes that it is also found in Andalucía and Castilla-La Mancha. The source measures rice in handfuls and gives no liquid quantity. Its method also adds red pepper that is missing from its ingredient list. The liquid ratio below is reconstructed. No town variations are documented.
01Geographic & Texture Profile
- Primary Geographic Zone: Extremadura, with the same dish in Andalucía and Castilla-La Mancha.
- Liquid & Texture Profile: Meloso (creamy). Simmered gently, then rested 5 min.
- Traditional Cooking Vessel & Fuel: A cazuela on a wood or gas stove.
02Historical & Cultural Context
Cardillos (Spanish oyster thistle, Scolymus hispanicus), called tagarninas in Andalucía, are a wild green foraged from field edges and fallow land. They are gathered mainly from December to February, after the rains. Their peeled midribs taste like a cross between artichoke and asparagus. In poor rural households they stretched a pot of rice into a meal without meat. The RENC includes the dish among Extremadura's forgotten or occasional dishes, part of a disappearing knowledge of wild plants alongside the cornagüelas and espárragos trigueros in the same survey.
Culinary science: the stalks are fibrous, so the strings must be stripped first ("para no encontrárnoslas al masticar"). Hot pimentón fried briefly in oil with garlic gives the dish its colour and heat without meat fat.
03Local Town-by-Town Variations
- Extremadura (RENC): Onion, red pepper, tomato, bay, hot pimentón (pimentón picante, the La Vera style), garlic.
- Andalucía (tagarninas): Tagarninas are classically made esparragás, with a mortar paste of fried garlic, cumin and pimentón thickened with fried bread. ⚠️ Not documented as a rice version.
- ⚠️ Castilla-La Mancha variants undocumented.
