Arroz con Bacalao de Vigilia (La Mancha y Extremadura)

Arroz de Cuaresma

Caldoso · brothy Cooked in Cassola Castilla-La Mancha y Extremadura

⚠️ Source-confidence note: I found no documented regional recipe for a Manchegan or Extremaduran arroz con bacalao. The Lenten classics of these regions are potaje de vigilia (chickpeas, cod, spinach), atascaburras and bacalao al ajoarriero, and Extremadura's potaje de vigilia uses noodles, not rice. This file documents the rice version that inland households make in the same Lenten logic, and it is a reconstruction.

01Geographic & Texture Profile

  • Primary Geographic Zone: Inland Castilla-La Mancha (Cuenca, Albacete, Ciudad Real, Toledo) and Extremadura.
  • Liquid & Texture Profile: Caldoso (soupy).
  • Traditional Cooking Vessel & Fuel: A clay olla or cazuela on the stove.

02Historical & Cultural Context

Salt cod was the protein of Lent across inland Spain, far from fresh fish. It arrived by mule and rail, preserved in salt. Manchegan Lenten cooking produced the potaje de vigilia with chickpeas, cod and spinach, castañuelas de bacalao in Cuenca (a forgotten Semana Santa dish documented by the RENC), and atascaburras (cod, potato, walnuts, egg). Swapping chickpeas or noodles for rice gives the arroz con bacalao de vigilia.

Culinary science: desalting (36–48 h with water changes) rehydrates the cod. Gentle poaching keeps its flakes intact. Fried garlic and pimentón are the aromatic backbone, and spinach adds minerality.

03Local Town-by-Town Variations (Crucial — reconstructed)

  • Cuenca: Cod + chickpeas + rice (a hybrid with the potaje).
  • Ciudad Real / Albacete: Cod + spinach + hard-boiled egg on top.
  • Extremadura: Cod + potato + pimentón de la Vera.
