Arroz Empedrao (Empedrado) Murciano

Meloso · creamy Cooked in Cassola Región de Murcia

01Geographic & Texture Profile

  • Primary Geographic Zone: The highland villages of the Región de Murcia ("pueblos de altura"): Noroeste and Altiplano.
  • Liquid & Texture Profile: Meloso (creamy). A thick guiso (stew) of rice and beans that is rested until it sets.
  • Traditional Cooking Vessel & Fuel: A clay cazuela (cazuela de barro), served straight from the pot.

02Historical & Cultural Context

The Revista Española de Nutrición Comunitaria includes this dish in its 2022 survey of forgotten Spanish dishes. It describes the empedrado as a traditional recipe of the Murcian highland villages, still cooked in many homes, especially in winter, but "not as popular as other rice dishes". It is made only with vegetable ingredients: red beans, rice, potato, a whole head of garlic, onion, green pepper, tomato, pimentón, bay leaf and saffron. The name means "cobbled", because the beans dot the rice like paving stones. It is the Murcian counterpart of the Valencian Lenten arròs empedrat, which uses salt cod and white beans.

Culinary science: the pre-cooked red beans release starch and a slightly sweet, earthy colour into the water. Combined with rice cooked at a 2:1 ratio and a resting period in clay, this gives a solid, spoonable guiso. The journal paper describes it as "a solid stew of moderate flavour". Traditionally it is eaten with home-cured split olives, whose sharpness balances it, and a glass of local wine.

03Local Town-by-Town Variations

⚠️ The RENC paper documents only one generic highland version. The variations below are reconstructed and should be verified locally.

  • Highland base (RENC): Red beans, whole garlic head, bay leaf, potato, green pepper and ajos tiernos (spring garlic) in the sofrito. Purely vegetable.
  • Noroeste (Caravaca / Moratalla): ⚠️ Some households may add salt cod in Lent, which brings it closer to the Valencian empedrat.
  • Altiplano: ⚠️ Cooked slightly looser, and sometimes with turnip.
