Northern Spain

A Cornixa Cantábrica

01Overview

Green, Atlantic Spain grows no rice, but it cooks rice with two great local resources: shellfish and dairy. On the coast, from the Galician rías to the Basque ports, rice is a caldoso vehicle for clams, lobster, velvet crab and monkfish, cooked in iron potas or clay tarteiras. Inland, Asturias braises its free-range pitu de caleya and serves it over rice. And the whole north, Asturias above all, is the heartland of arroz con leche, with the burnt-sugar requemado and the Festival del Arroz con Leche de Cabranes.
