Provincia de Castellón

01Overview

Castellón's rice cooking is less famous than Valencia's or Alicante's, but it has strong local signatures. The fishing ports of Vinaròs, Benicarló, Peníscola and El Grau de Castelló land galeres (mantis shrimp) and llagostins (Vinaròs prawns). The coastal plain grows the D.O. Alcachofa de Benicarló. The cold, mountainous interior (Els Ports, Maestrat, Alt Millars) cooks rabbit, snail, mushroom and matança rices over pine and oak. The province's emblematic everyday dish is not a rice at all but the olla de la Plana, a stew of beans and vegetables. Rice is the festive and coastal complement, especially during the Magdalena festivals and Castelló's Mes de l'Arròs.
