Chipirones en su Tinta con Arroz Blanco

Txipiroiak Bere Tintan Arroz Zuriarekin

⚠️ Source-confidence note: included because in the Basque Country this is the way rice meets squid. Unlike Mediterranean arroz negro, the rice is cooked separately (plain white) and served beside the stuffed squid in ink sauce. The squid recipe is from Spain.info (Turespaña), listed under País Vasco. That source gives no rice method, so the rice quantities follow a Hola.com version. Town variations are not documented.

01Geographic & Texture Profile

  • Primary Geographic Zone: País Vasco (the Bizkaia and Gipuzkoa ports: Bermeo, Getaria, Hondarribia, Donostia).
  • Liquid & Texture Profile: Seco (dry). The rice is a dry white pilaf served beside the squid's ink sauce.
  • Traditional Cooking Vessel & Fuel: A clay cazuela for the squid, simmered slowly, and a pot for the rice.

02Historical & Cultural Context

Txipirones (small squid) caught by line in summer are a Basque emblem. The classic preparation stuffs the bodies with their own chopped tentacles, onion, garlic and serrano ham, fries them, and simmers them for a long time in a sauce of their ink, onion, tomato, green pepper and white wine, passed through a food mill. Rice enters as a neutral white bed that soaks up the black sauce. It is the Cantabrian-coast mirror of the Mediterranean ink rices: the same ingredients, but the rice and the cephalopod stay apart.

Culinary science: milling the sauce makes it silky. Cooking slowly for 20–60 min tenderises the squid's collagen. Plain white rice is cooked with garlic and onion only, so it doesn't compete with the ink, and each forkful is balanced on the plate.

03Local Town-by-Town Variations

  • Spain.info (País Vasco): Stuffed squid, sauce of onion, tomato, green pepper, garlic, ink, white wine and fish stock, passed through a pasapurés. White rice served separately.
  • Hola.com version: Squid stuffed with their own tentacles, cooked for about an hour on very low heat in a clay dish. Rice: 250 g with 500 ml water, garlic and onion.
  • ⚠️ No town-specific variants found.
