01Geographic & Texture Profile
- Primary Geographic Zone: Province of València (coastal home cooking).
- Liquid & Texture Profile: Caldoso (soupy).
- Traditional Cooking Vessel & Fuel: An earthenware casserole (cassola) or pot.
02Historical & Cultural Context
A winter soupy rice in which the cuttlefish is boiled for half an hour first. This is unusual, since most recipes sear it. The boiling makes a broth and tenderises the cuttlefish. Fried cauliflower and paprika are then added. It belongs to the Valencian arrossos caldosos amb peix family recorded in the same collection, alongside spinach and ray, cuttlefish, prawns and mussels, eel, and monkfish.
Culinary science: cuttlefish collagen tenderises with about 30 min of simmering. Searing gives colour, but boiling gives a gelatinous, savoury broth that coats the rice. Salt goes in after tasting the broth, because cuttlefish brings its own salinity.
03Local Town-by-Town Variations
- Recorded version: Cuttlefish boiled 30 min, cauliflower fried with paprika, 15 min more, then the rice.
- Caldós family (same source): Spinach + beans or chickpeas + ray; prawns and mussels; eel; monkfish. Keep about 3 parts solids to 2 parts liquid.
- Seco cousin: Arroz con sepia y alcachofas.
- ⚠️ Town variants are not documented.
