Arroz y Habichuelas

Murcian rice soup with beans and vegetables

Arroz con Habichuelas Murciano

Caldoso · brothy Cooked in Stew pot Murcia

01Geographic & Texture Profile

  • Primary Geographic Zone: La Huerta de Murcia (the peñas huertanas around Murcia city, e.g. Algezares).
  • Liquid & Texture Profile: Caldoso (soupy). A bean pot with the rice cooked in it.
  • Traditional Cooking Vessel & Fuel: A tall olla on the stove.

02Historical & Cultural Context

The Murcian huerta's equivalent of the Valencian arròs amb fesols i naps and of the Vega Baja's tres puñaos. It is a meatless bean-and-vegetable pot made with turnip, alcaciles (Murcian for artichokes), tabillas (Murcian for green beans, in season), habas, cardoon stalk and potato, finished with a sofrito of a whole head of garlic, ñoras, ajos tiernos and tomato. The Ayuntamiento de Murcia and the Federación de Peñas Huertanas include it in their huerta cookbook Un paseo por la huerta, which measures it in handfuls: "1 puñado de habichuelas y medio puñado de arroz por persona".

Culinary science: the cookbook "scares" the beans with cold water three times when they come to the boil (romper la cocción). This traditional trick evens out cooking so the skins don't split before the centres are tender. Ñora fried with the garlic colours the oil red without burning paprika, and the paprika goes in off the heat.

03Local Town-by-Town Variations

  • Huerta de Murcia (Peñas Huertanas): Habichuelas + turnip + alcaciles + tabillas, whole garlic head + 2 ñoras + ajos tiernos in the sofrito, colourant, potato. Rice added when the potatoes boil.
  • Generic Murcian version (Cronista): Adds habas (1 kg) and penca de cardo, green pepper. The beans cook 1.5 h. Recommends Calasparra rice. Rests 10 min.
  • Vega Baja cousin: Arroz de los tres puñaos adds lentils.
