Arroz a la Zamorana

Zamora winter rice with pig's ear and snout, turnip and garlic

Arroz Zamorano

Meloso · creamy Cooked in Clay casserole Castile and Leon

01Geographic & Texture Profile

  • Primary Geographic Zone: Province of Zamora: Aliste (Alcañices), Tierra de Campos (Villalpando paprika), and Zamora city.
  • Liquid & Texture Profile: Meloso (creamy). Cooked with about twice the broth of the rice; the grain keeps some bite. The official Junta version is finished under a grill with crisped bacon.
  • Traditional Cooking Vessel & Fuel: A wide clay cazuela or paella over a wood or gas fire. The official version is finished under a very hot grill.

02Historical & Cultural Context

Arroz a la zamorana is Castilla y León's great rice and a child of the matanza (pig slaughter). Rural families in the Aliste comarca used every part of the pig. The noble cuts (ham, belly, chorizo, ribs) went in alongside cheaper ones (ear, snout, tail, trotter), which made the rice more filling. According to EsDiario, the earliest written reference is an 1884 Almanaque culinario describing a rice served in Alcañices, and the dish appears in El Practicón (1890). Directo al Paladar groups it with the chanfaina salmantina as one of the region's rices with offal or casquería; see chanfaina.

Culinary science: ear, snout and trotter are rich in collagen. Simmering them first produces a gelatinous broth, which gives the rice its creamy body without stirring. Lard (manteca) rather than olive oil is the traditional fat. Sweet paprika from Villalpando is added to the hot fat for seconds only, so its carotenoids colour the fat without burning. In the Junta's version, the grill crisps the bacon covering into torreznos over the rice, which acts as a lid and seasoning together.

03Local Town-by-Town Variations

  • Official Junta / Zamora Style (Turismo Castilla y León): Ear + snout simmered with turnip, onion, garlic, parsley, oregano and thyme in lard. Rice sautéed with chichas (seasoned minced pork) and ham, Villalpando paprika, then covered with thin bacon slices crisped under the grill.
  • Aliste / "recipe of the grandfather" Style (EsDiario): A broth of belly, ear, tail, trotter, ham tip and ribs with bay leaf. Tomato sofrito, sliced chorizo. Cooked in the pan for 18–20 min, then rested 3–4 min. Optional green or red pepper and rosemary.
  • Restaurant Style (Directo al Paladar): No offal. Belly, chorizo picadillo, ham cubes, fresh sausages and chorizo with red pepper, thyme, rosemary and oregano. Twice the broth of the rice, in the cazuela.
  • La Rúa, Zamora (restaurant tradition): Served with chorizo, ribs and ear.
