01Geographic & Texture Profile
- Primary Geographic Zone: Alicante city and L'Alacantí. It is also cooked in La Safor (Gandia, Oliva) as the paella de Setmana Santa, and in Castellón as a Lent rice.
- Liquid & Texture Profile: Seco (dry) when made in the paella, which is the Alicante and Safor habit. A caldoso version exists in Catalonia and in some Valencian homes (see §3).
- Traditional Cooking Vessel & Fuel: A steel paella over wood or gas, or a clay cassola for the caldoso version.
02Historical & Cultural Context
This is a Lent and Holy Week rice (Quaresma, Setmana Santa). Meat was forbidden on vigil days, so households used salt cod, the inland Mediterranean's preserved fasting fish, and cauliflower, which is at its best in late winter. Writing about La Safor, Valencia Plaza calls the dish "the Holy Week paella, made of cauliflower and cod". Alicante city's Jornadas Gastronómicas de Cuaresma (Lent food days) list a cod rice with huerta vegetables among their main dishes. The dish is one of a family of Lenten rices with arròs amb bledes, arròs empedrat and the Vega Baja arroz de los tres puñaos.
Culinary science: cauliflower florets fried hard in oil caramelise, which turns their sulphurous notes nutty and sweet. Salt cod has been cured and dried. Once it has been desalted for 36–48 h, a brief fry turns its gelatinous skin into a binder. The cod is still salty, so the broth must be salted at the end, after tasting.
03Local Town-by-Town Variations
- Alicante city: Seco in the paella. Often a ñora or salmorreta base. Cauliflower, cod, and sometimes garlic shoots (ajos tiernos) and peas. Fish or vegetable broth.
- La Safor (Oliva, Gandia): Seco, as the "paella de Setmana Santa". Cauliflower and cod, with pebre roig and saffron. Cooked over wood at family Easter gatherings.
- Castellón: Lent "vigil" versions with desalted cod and mixed vegetables, with no trace of meat. Often caldoso.
- Catalan/Valencian caldoso: Caldoso, with green pepper and tomato. Some home versions include panceta, which goes against the vigil purpose.
