01Overview
Murcia shares the Segura basin with Alicante's Vega Baja, and with it the ñora, the serranas snails and the irrigated huerta. Its distinctive asset is D.O. Arroz de Calasparra. Rice has been grown on the terraces of the Segura and Mundo rivers since at least the 14th century, and in 1986 Calasparra became the first rice in the world to receive a Denominación de Origen (and the first non-wine D.O. in Spain). Only bomba and balilla × sollana qualify. Murcian rice cooking has three settings: the Mar Menor coast (the caldero), the huerta (pork and vegetable rices) and the mountain interior (rabbit and snails over a wood fire, plus Lenten and forgotten dishes such as the empedrao).
02Cultural Sub-Regions
| Sub-region | Rice personality | Key towns |
|---|---|---|
| Campo de Cartagena / Mar Menor | Caldero (ñora, mújol), seafood rices | Cartagena, San Pedro del Pinatar, Cabo de Palos, San Javier |
| Huerta de Murcia / Vega del Segura | Magra + costillejas + vegetables, lemon on the side | Murcia, Alcantarilla, Molina, Beniel |
| Noroeste | Calasparra rice, rabbit + serranas, arroz de ayuno | Calasparra, Caravaca, Moratalla, Cehegín |
| Altiplano | Vine-shoot fire, highland empedrao | Jumilla, Yecla |
Arroz y costra: Murcian households near the Vega Baja border also cook the egg-crusted rice. Its documented home is Alicante (Elche and Orihuela), and I found no separate Murcian source, so see recipe_arroz_con_costra.md.
