01Geographic & Texture Profile
- Primary Geographic Zone: The Ebro Delta (Terres de l'Ebre): Deltebre (Jesús i Maria), Sant Jaume d'Enveja, Amposta.
- Liquid & Texture Profile: Caldoso (soupy). The RENC source states "el arroz debe presentarse caldoso".
- Traditional Cooking Vessel & Fuel: A large cassola or olla on the hearth. It was traditionally made in big batches.
02Historical & Cultural Context
The Ebro Delta concentrates most of Catalonia's rice cultivation. This is its everyday winter pot: rice, cabbage and white beans with a little salt pork. Families cooked it in large quantities to last 4–5 days, because every ingredient came from their own land and it cost almost nothing. Enriqueta Piñana, born in Jesús i Maria (Deltebre), told the Revista Española de Nutrición Comunitaria that her family ate it three days a week. It is still served in winter, at local festivals and in Delta homes, and it is recorded in the book La cuina del delta de l'Ebre.
Culinary science: the beans are cooked with the panceta, so their liquid becomes a pork-flavoured, starch-rich stock. Cabbage fried into the sofrito caramelises its sugars before the long simmer. The 5-minute rest lets the rice swell without losing the soupy body.
03Local Town-by-Town Variations
- Deltebre (Jesús i Maria), RENC version: Panceta, cabbage, white beans, onion, garlic, tomato, colourant.
- Richer variants (documented in RENC): Add other pork cuts: ears, bones, morcillas.
- Compare the Valencian arròs amb fesols i naps and the Mallorcan arròs brut.
