Colas de Cordero con Arroz

Guiso de Colas de Viernes Santo

Caldoso · brothy Cooked in Cassola Aragón, Navarra y La Rioja

⚠️ Source-confidence note: this is a forgotten dish documented in the Revista Española de Nutrición Comunitaria supplement on Aragón's forgotten dishes. There, the lamb-tail stew is made with potatoes and "rice can also be added" as a variant. The rice-forward version and the quantities below are my blueprint. Town variations beyond the documented Good Friday custom are not sourced.

01Geographic & Texture Profile

  • Primary Geographic Zone: Sheep-farming Aragón: the Pyrenean valleys, Bajo Aragón, the Monegros steppe, and Zaragoza (where the chef Teodoro Bardají served it).
  • Liquid & Texture Profile: Caldoso (soupy).
  • Traditional Cooking Vessel & Fuel: An iron or clay pot over a wood fire.

02Historical & Cultural Context

On Good Friday, shepherds escodaban, docking the tails of the ewes kept for breeding. The tails became a stew. According to the RENC account, it was said that those who docked the tails had licence to eat them even on a day of fasting (vigilia), and that it was "the only meat eaten from a living animal". The celebrated Aragonese cook Teodoro Bardají, at the Hotel Oriente in Zaragoza, reportedly served it to a famous vedette from the nearby Teatro Principal, who returned for it whenever she was in town. The stew is spiced with cinnamon, an old Aragonese and Andalusi-inflected seasoning, and rice can be added.

Culinary science: lamb tails are mostly fat, skin and collagen around small vertebrae. Singeing (socarrar) the wool, then frying the tails until golden, renders fat and creates Maillard flavour. The collagen gives a gelatinous broth that suits rice.

03Local Town-by-Town Variations

  • Documented base (RENC): Potatoes cooked with salt, cinnamon, parsley, garlic and bay. Tails singed, fried and added. Rice is optional.
  • Zaragoza (Bardají, Hotel Oriente): A refined restaurant version of the shepherd stew.
  • Further town variants are not documented; verify with Aragonese pastoral communities.
