01Geographic & Texture Profile
- Primary Geographic Zone: Inland Andalucía: the countryside of Sevilla, Córdoba and Cádiz, the Montilla-Moriles and Jerez wine country, and the cortijos (farm estates).
- Liquid & Texture Profile: Seco (dry). Cooked in a paella until almost no liquid remains, then rested under a cloth.
- Traditional Cooking Vessel & Fuel: A paella or wide pan over wood or gas, cooked outdoors at the cortijo.
02Historical & Cultural Context
Campero means "of the countryside". This is Andalucía's everyday open-air rice, cooked at cortijos, romerías and Sunday outings. Directo al Paladar calls it "el más típico de Andalucía" and notes that it is the very definition of "arroz con cosas" ("rice with things"): a rice that takes whatever the larder and the season offer. The base is pork magro and lots of vegetables, but chicken or rabbit are equally accepted. Two Andalusian signatures set it apart from Valencian rices: a splash of fino (Montilla-Moriles or Jerez) in the sofrito, and serving it with a slice of lemon and sprigs of thyme or rosemary.
Culinary science: fino adds acidity and oxidative nutty aromas that brighten a pork-based fondo without stock gelatin. Adding the peas mid-cook keeps them green. The final 7–8 minutes under a cloth let the remaining surface moisture redistribute, giving loose, dry grains.
03Local Town-by-Town Variations
- Generic cortijo version (documented): Magro, green and red pepper, artichoke hearts, peas, tomato, fino, saffron or colourant.
- Córdoba: The festive, meloso version eaten from a tall pot on San Rafael is the perol cordobés.
- Sevilla marshes: With duck, as the arroz caldoso con pato de las marismas.
- Jaén: Ham, chorizo and green olives, as the arroz cortijero.
- ⚠️ Further town-level variants are not documented in the sources found.
