⚠️ Source-confidence note: this is a recovered and reinterpreted recipe from Riba-roja de Túria, not an unbroken tradition. It is based on research by Joan Clement and others into the town's historical produce, combined with today's ingredients. The texture is my reading of 1.6 L of water for 320 g of rice.
01Geographic & Texture Profile
- Primary Geographic Zone: Camp de Túria (Riba-roja de Túria).
- Liquid & Texture Profile: Meloso (creamy). 1.6 L of reduced broth for 320 g of Sénia rice, cooked gently for about 14 min.
- Traditional Cooking Vessel & Fuel: A paella over wood.
02Historical & Cultural Context
In the 17th and 18th centuries Sénia rice was grown along the Túria by royal order, especially in Riba-roja, until a plague wiped out the crop and rice farming disappeared there. Oranges later took over the huerta. This recovered rice tells that story on the plate. It uses farmyard chicken (or duck), artichoke, the winter roots of Riba-roja's puchero (turnip, parsnip and celeriac), pumpkin, rovellons and other seasonal mushrooms, and, above all, orange peel. Locals traditionally perfumed oil with dried orange skin for desserts, and here the technique moves to savoury cooking. The rule is "no utilizar caldo ni potenciadores de sabor": no stock and no flavour enhancers.
Culinary science: citrus-peel oils (limonene) are fat-soluble. Browning the meat in oil with a whole orange peel infuses the fat, then the peel is removed so it doesn't turn bitter. A fresh strip goes back in at the end for top notes. Pumpkin is added late "para que no se nos pase", so it holds its shape. Rosemary is kept in the background.
03Local Town-by-Town Variations
- Riba-roja de Túria (restaurant version): Chicken or duck, artichoke, pumpkin, turnip, parsnip, celeriac, mushrooms, orange, with thyme, basil or sage.
- Riba-roja home version: Chicken browned in orange-peel oil, turnip, parsnip, water, rice, pumpkin added later, a strip of peel at the end.
- ⚠️ No other towns are documented.
