Arroz Marinero Balear

Arròs de Peix (Caldós de Pescadors)

Caldoso · brothy Cooked in Cassola Islas Baleares

⚠️ Source-confidence note: a Balearic fishermen's brothy rice is documented in English-language cookbooks (Jeff Koehler) and the Ibiza tourism board lists arròs a la marinera and bullit de peix amb arròs a banda. I found no detailed Mallorcan or Ibizan primary recipe. The master recipe below is reconstructed from those outlines.

01Geographic & Texture Profile

  • Primary Geographic Zone: The Balearic fishing ports: Mallorca (Palma, Port de Sóller, Cala Rajada), Eivissa (Sant Antoni, Es Cubells) and Formentera.
  • Liquid & Texture Profile: Caldoso (soupy). The Ibizan "arròs a banda" variant is drier (see §3).
  • Traditional Cooking Vessel & Fuel: An iron or clay pot over wood on board or on the beach.

02Historical & Cultural Context

As on the Valencian and Murcian coasts, Balearic fishermen boiled the unsold catch with potatoes and saffron and then cooked rice in the broth. Ibiza's traditional recipe book lists bullit de peix amb arròs a banda and arròs a la marinera. The bullit is fish boiled with potatoes and served with allioli, followed by rice cooked in the broth. This is the Pitiusan counterpart of the arroz a banda and the caldero. Koehler's book on the Spanish Mediterranean islands records a fisherman's brothy rice (arròs caldós) made with saffron and potato.

Culinary science: small rockfish (morralla, rotja, cap-roig) are full of gelatine and give a broth with body. Saffron colours and perfumes it. Potato starch and rice starch together give a lightly bound, soupy rice.

03Local Town-by-Town Variations

  • Eivissa, bullit de peix amb arròs a banda (documented by name): The fish and potatoes are served first with allioli, then the rice, cooked drier.
  • Mallorca, arròs caldós de peix (documented in outline): Saffron + potato + fish broth. Soupy.
  • ⚠️ Formentera / Ibiza sofrit: Some cooks may add a picada of almond and garlic. Unconfirmed.

Step-by-Step Cooking Blueprint

  1. Add the saffron to the boiling broth, then add the rice.

Fishermen's broth rices: Unsaleable catch boiled into broth; fish often eaten first, rice cooked in what remains.
