Arroz con Pava (Pavo)

Festive rice with turkey and meatballs

Arròs amb Titot

Meloso · creamy Cooked in Paella pan Alicante

⚠️ Source-confidence note: turkey rice is part of La Vega Baja's festive and post-Christmas cooking, but it is poorly documented online. My searches found no published town-specific recipe for "arroz con pavo" from Redován, Almoradí, Elche or Pinoso. The tradition that is well documented is pava borracha (Almoradí's wine-fattened turkey) and the Christmas cocido con pelotas, from which this rice derives. The variations below are reconstructed from that tradition and common comarca practice and are flagged as such. Please verify them with local cooks or a comarca cookbook before treating them as canonical.

01Geographic & Texture Profile

  • Primary Geographic Zone: La Vega Baja del Segura (Almoradí, Orihuela, Redován, Callosa), with spill-over into El Baix Vinalopó (Elche, Crevillent).
  • Liquid & Texture Profile: Meloso (creamy). Cooked in turkey-cocido broth, rich in gelatin. A dry paella version also exists.
  • Traditional Cooking Vessel & Fuel: A deep paella or perol over wood or gas.

02Historical & Cultural Context

La Vega Baja has a long tradition of raising Spanish Black turkeys. In Almoradí the bird is finished on feed laced with wine, giving the famous pava borracha ("drunk turkey"), whose meat is richer and more marbled. At Christmas the turkey goes into the cocido con pelotas: large meatballs of minced turkey and pork, breadcrumbs, pine nuts, lemon zest and parsley, often wrapped in cabbage leaves. The days after Christmas bring the rice. The leftover turkey broth, meat and pelotas are turned into an arroz, either meloso in the perol or dry in the paella. Structurally it is a cousin of arroz con costra, which shares the pelotas, and of arròs al forn, which is also leftover-cocido logic.

Culinary science: turkey drumsticks and wings are collagen-rich, so a long-simmered cocido broth has a lot of body. A wine-fed bird contributes more intramuscular fat. The pelotas' breadcrumb and egg binder partly dissolves into the rice, thickening it.

03Local Town-by-Town Variations (Crucial — reconstructed, verify locally)

  • The Almoradí Style: Uses pava borracha. Meloso in a perol. Broth from the Christmas cocido. Pelotas nested on top. Artichoke when in season.
  • The Redován / Callosa Style: The turkey is browned fresh in a paella (like rabbit in the conejo y caracoles rice), with a ñora picada and sometimes serranas snails. Dry, thin layer.
  • The Orihuela Style: Turkey combined with embutido oriolano (longaniza blanca/roja). Sometimes finished with egg as an "arroz y costra de pavo".
  • The Elche / Crevillent Style: Turkey enters the arroz con costra frame in place of rabbit at Christmas.
