01Geographic & Texture Profile
- Primary Geographic Zone: L'Alacantí (Alicante city), with the same pairing common along the Alicante coast in spring.
- Liquid & Texture Profile: Meloso (creamy). 2 L of fumet go in gradually for 320 g of rice, with occasional stirring. This is the classification I've given it; the source doesn't use the word.
- Traditional Cooking Vessel & Fuel: A paella pan on gas.
02Historical & Cultural Context
A spring rice of the Alicante coast. Small squid (chipirones, Valencian xipirons) are paired with young garlic (ajos tiernos), which appears in the huertas from late winter. Alicante city's tourism office publishes it in its "Ciudad del Arroz" recipe collection, and it uses the city's signature salmorreta (garlic, tomato and ñora). The garlic is sautéed and set aside rather than browned hard, so it keeps its green, grassy sweetness.
Culinary science: small squid release water and toughen if they stew. Searing them first over high heat and returning them later keeps them tender. Adding boiling stock gradually and stirring now and then releases surface starch for a creamy, bound texture, the opposite of the no-stir seco paella.
03Local Town-by-Town Variations
- Alicante city (Turismo de Alicante): Salmorreta base, stock added gradually, 10 min high + about 8 min low, short rest.
- Other coastal towns: ⚠️ Not documented. Compare arroz con sepia y alcachofas (La Safor/Valldigna) and arroz negro for other cephalopod treatments.
