01Overview
Madrid has no rice fields and no regional rice dish of its own. Its rice culture is that of the capital: casas de comidas, tabernas and the menú del día, where rices from every region meet. Two plates are genuinely embedded in Madrid's everyday food culture: arroz con leche, the cold, cinnamon-dusted dessert of traditional taverns, and arroz a la cubana, the cheap and filling plate of white rice, tomato sauce and fried egg. Madrid's Sunday paellas are generally Valencian-style imports, often of the mixed type that Valencians would not call "valenciana".
⚠️ Madrid-specific documentation of these dishes is thin; see each file's notes.
