01Overview

Catalan rice cooking is built on the cassola (a deep earthenware pot) rather than the flat paella. It uses a slow, dark onion sofregit, a picada (pounded garlic, parsley, nuts or bread, saffron) stirred in at the end, and the mar i muntanya pairing of meat and seafood in the same pot. The usual texture is melós. Rice is grown in two places. The Delta de l'Ebre is protected by the D.O.P. Arròs del Delta de l'Ebre and is the largest rice area in Catalonia. The Baix Empordà grows Arròs de Pals under the Productes de l'Empordà guarantee mark. Its cultivation dates to at least 1452, was abandoned in 1838 over malaria, and was revived around 1900.
