⚠️ Source-confidence note: documented in the Revista Española de Nutrición Comunitaria's 2022 survey of forgotten dishes of the Balearic Islands. It was recorded in the 18th century and appears in Mallorcan cookbooks of 1886 and 1931, but it is now out of use. The source gives a large festival-scale batch, which is scaled down below. No town variations are documented.
01Geographic & Texture Profile
- Primary Geographic Zone: Mallorca.
- Liquid & Texture Profile: Meloso (creamy). A thick, spoonable sweet cream of ground rice, milk, eggs and cinnamon.
- Traditional Cooking Vessel & Fuel: A large cassola or pot on the stove, stirred continuously.
02Historical & Cultural Context
"Angel's bowl" was a prestigious Mallorcan festive sweet, "muy celebrada, especialmente para los días de fiesta". It was first recorded in the 18th century and was usual until the mid-20th century. It appears in Pere d'Alcàntara Penya's La cuyna mallorquina (Palma, 1886) and in Cuina popular de Mallorca (Sóller, 1931). It differs from ordinary arroz con leche in three ways: the rice is washed, dried and ground into flour; it is enriched with many eggs; and it is cut with meat broth made from lean pork. That mix of sweet and savoury is a survival of medieval and early-modern European cooking, in the same family as blancmange (menjar blanc).
Culinary science: ground rice gelatinises quickly and evenly into a smooth cream with no whole grains. The eggs thicken it further as a custard, so it has to be stirred continuously to stop them curdling. The meat broth adds savoury depth and gelatin.
03Local Town-by-Town Variations
- Mallorca (1886 / 1931 cookbooks, RENC): Rice flour, milk, eggs (half of them yolks only), sugar, cinnamon, pork broth.
- ⚠️ No other variants documented. Compare the Albacete arroz con miel de Bogarra and the Asturian requemado in arroz con leche.
