Arroz del Pedrón de Parayo

Cantabrian rice with eel and river crayfish

Arroz de San Pedro con Anguilas y Cangrejos

Seco · dry Cooked in Paella pan Northern Spain

⚠️ Source-confidence note: documented in the Revista Española de Nutrición Comunitaria's 2022 survey of forgotten dishes of Cantabria. The source itself says the quantities "no son fijas" (are not fixed), because each friend brought what they could. The amounts below are scaled from the source's large-batch list (1 kg rice) down to four people. Native river crayfish and European eel are now protected or heavily regulated. Use legal substitutes (American red crayfish, conger eel).

01Geographic & Texture Profile

  • Primary Geographic Zone: Cantabria, in the Pas-Pisueña valleys around Villasevil (Santiurde de Toranzo) and the Pedrón de Parayo (a large stone meeting-place).
  • Liquid & Texture Profile: Seco (dry). Cooked in a paella with twice the broth of the rice, then rested.
  • Traditional Cooking Vessel & Fuel: A paella over an outdoor fire.

02Historical & Cultural Context

A rice of friendship and of San Pedro (29 June). In the 1940s–50s, says the RENC source, a group of friends met by the Pedrón de Parayo to talk and rest from their daily work. "Two days before, some set lines to catch eels. The day before, others went to catch crayfish in Villasevil. Others stole the tomatoes. And with everything they brought, they made a rice dish." It is a rare freshwater rice of the Cantabrian north: river crayfish and eels, flamed with brandy, spiced with clove and pepper, and cooked in a paella.

Culinary science: the crayfish are gutted (capar: twist and pull the middle tail fin so the intestine comes out with it) to avoid bitterness. Flaming the brandy burns off the alcohol but leaves the aromatics. Clove, unusual in Spanish rices, pairs with the oily eel. White wine reduced over high heat adds acidity to cut the fat.

03Local Town-by-Town Variations

  • Pedrón de Parayo / Villasevil (RENC): Eels or conger, crayfish, onion, firm tomatoes, white wine, brandy, clove, pepper. Twice the broth of the rice.
  • ⚠️ No other villages documented. Compare León's arroz con cangrejos de La Bañeza.
